To be honest with you, I never really understood why people went crazy for red velvet. Like, it's just a less chocolate-y chocolate cake. Why would you want something like that? haha. But I've been doing a lot of test baking. While this won't be my new favorite cake, it has changed my mind about Red Velvet Cake. It's light, it's bright, and it's smothered in cream cheese frosting. So what do you say? Let's make cake together...
In a mixer bowl, dump in 3/4 cup soft butter, 2 1/4 cups sugar and 1/4 cup cocoa powder.
Beat until creamy
crack in 3 eggs, 1 1/2 t vanilla and 1 oz red food coloring.
Mix together.
In a separate bowl whisk together 3 cups flour, 3/4 t salt and 1 1/2 t baking soda.
we're also gonna need 1 1/2 cups buttermilk
Mix in the dry ingredients and the buttermilk alternately.
Now prep 3 6" cake pans (affiliate link) Smear the bottoms with butter and top with a circle of parchment paper
Pour the cake batter in each as evenly as possible
Bake at 350 for 40-45 minutes
