What the heck is a Galette? Basically just a free form pie. It's really easy to make because it's meant to be rustic so it's okay if you're not good with shaping crust or filling pies. This buttery crust is easy to make in a blender or a bowl and the recipe for that can be found on this post. Another plus is that it's super fun to make them into little personal galettes. I'm picturing having friends over for dinner and serving them each a cutie little pie with a scoop of ice cream on top. So cute. So yum. Let's make peach pie... You'll need about 4 peaches, sliced and 2 cups of strawberries, sliced. In a small bowl. stir together 1/4 cup granulated sugar, 1/4 cup brown sugar, 1/2 tsp cinnamon, 1/4 tsp nutmeg, and 2 teaspoons of cornstarch. Pour your spices over the fruit along with 1/2 teaspoon of vanilla extract and stir it all together to evenly coat them evenly. Let them sit and get all juicy for about 15-20 minutes while you prep your pie crust. When both are ready press the pie crust flat with your hands into a circle. Scoop the filling in the center of the pie crust. Fill as much as you can while still having enough around the edge to fold it up. Fold and pinch the edges so the filling doesn't spill out. Or shape it into mini galettes. Bake the pie at 400 for 30 minutes or until the crust is cooked through.
