Please don't turn away just because this ice cream has to be churned. If you don't have an ice cream maker and you know me, you're more than welcome to borrow mine. I bet you'd also be surprised how many people you know that have one and are willing to let you borrow it too. Don't be afraid to ask. Homemade ice cream is at stake. So, let's make ice cream together... Begin with 1 cup of sugar and 8 egg yolks. Whisk them together in a medium sized sauce pan until fully combined. Heat 2 cups whole milk in a small sauce pan over low heat until simmering. Once the milk reaches a simmer pour it into a measuring cup or something easier to control your pour. Then, slowly pour the milk into the egg+sugar mixture while whisking continuously. Now bring the mixture to 165° over medium heat stirring constantly. Once it reaches temperarure take it right off the heat and move it into an airtight container. Refrigerate until it comes back to 65°. The longer you chill it the better. Once it's been chilled pour in 2 cups of cold heavy whipping cream and half an ounce of peppermint extract. I put a whole ounce (an entire small bottle) and it was definitely too much. So stick with half. Pour your ice cream into the container for your ice cream maker. Put the lid on and set it inside the barrel. Put the motor in place and alternate adding ice and ice cream salt into the barrel until it's full. Plug it in and let it churn until it has thickened like soft-serve. While it's churning, let's make fudge to go into our ice cream!!! Place 7 oz sweetened condensed milk, 2 tablespoons butter and 8 oz dark chocolate in a sauce pan. Heat over med-low heat until melted, stirring regularly. Once it's all melted and smooth, pour it into an 8x8 pan lined with foil and greased. Smooth it out. Let the fudge set in the fridge while the ice cream churns. When the ice cream is nearly done, get out the fudge and chop it into bite sized pieces. Pour ice cream into a freezer safe container. Add in chocolate chunks and stir. Place the lid on and freeze until it's fully set.
