Have you ever had a London Fog Latte? Basically it's hot brewed Earl Grey Tea with steamed milk. Earl Grey Tea is so perfect though because it's flavors are subtle but complex; you get notes of black tea, bergamont, lavender and even a little honey. That with the creamy, sweet warm milk... boy. You've got a treat. What's more? Turn it into a cake you say? okay! Let's make this London Fog Cake together... First on deck are the dry ingredients: 2 cups of sugar, 2 1/2 cups flour, 3 tsp Baking Powder, and 1 tsp salt. whisk them together in a large bowl. Next, Rip open one Earl Grey Tea bag and pour it into the bowl. Whisk together next on deck are the wet ingredients: 2 eggs, 1 cup of milk, 1/2 cup oil, and 1 teaspoon Vanilla. Whisk together and pour into the dry ingredients Whisk until smooth Lastly, we'll pour in one cup of brewed then cooled earl grey tea Whisk ever so gently to fully incorporate it into the batter. Line 3, 6" pans (or two 8" pans) with butter and parchment paper. Then evenly distribute the batter between them. Usually it's exactly 2 cups per 6" pan. Bake at 350 for 30 minutes, or until the center has no jiggle. Wrap promptly in plastic wrap and place in the freezer until cooled completely. Once they're cooled layer and cover them with Cream Cheese Frosting so we get that yummy, creamy milky taste. Then you'll have a perfect London Fog Cake.
