Yum. Lemon curd. Great for pie, great for yogurt, great for adding to frosting, great for filling doughnuts... I’m not sure what it’s not good for. I LOVE it. I wanna just eat it by the spoonfull. Tart and sweet and sooo lemony. Let’s make lemon curd together. In a sauce pan, whisk together 1 1/2 cups sugar, 1/2 cup corn starch, and salt. In a small bowl put 4 egg yolks 2/3 cup lemon juice and 1 3/4 cups water transfer it into something with enough room to whisk, or just put it in a bigger bowl to begin with, and whisk until frothy. Pour the wet ingredients into the saucepan as well. Cook over medium heat stirring the whole time until it boils. Then let it boil for 3 minutes (still stirring). remove it from the heat and stir in 3 T room temperature butter and 2 tsp lemon zest. If you're using it for a pie, you'll want to pour it straight into your baked pie crust. otherwise you can pour it into a container to keep in the fridge or freezer. It will solidify and become like a jelly. Once it does, you can use it as such: spread it, fill it, layer it, whatever. Let me know how you use it! (this makes about 2 cups) I chilled it and then whipped a couple tablespoons into some buttercream!!! *panting dog emoji* YUM.
