I've been meaning to put this on the blog for a while now, but every time I make it I'm in a hurry and don't have time to take the photos. Until the other day. Like most good dinners I make, this recipe came from my sister. When Jeremy and I got married she gave me a recipe box with a bunch of handwritten recipes. They have been SO useful. One that we make fairly often is this. I love this Jambalaya because it's super easy, so flavorful, so warm, pretty spicy, and is 90% pantry staples! The only thing that isn't is the meat and those things stay good for months in the fridge. So keep this as your oh-crap-I-didn't-plan-dinner dinner. You won't be sorry. Let's make Jambalaya together... You'll need:1 lb sausage (I love Eckrich), 2 cups rice, 8 oz tomato sauce, fresh or frozen chopped bell pepper and onion, 2 T parsley, 2 T chicken bullion, 1 tsp dried thyme, 1 tsp minced garlic, 1 tsp Black pepper, 1/2 tsp cayenne (less if you're a wimp) 1/2 tsp salt. Cook your onion, bell pepper and sliced sausage over med-high heat until the veggies are soft. Dump in your rice, tomato sauce and spices. Stir it all together Lastly, 4 cups water. bring to a boil Cover, then reduce the heat to med-low and simmer for 20 minutes. Serve it up!
