Yesterday was my birthday. We spent the day at Hobby Lobby and World Market. We watched tv in bed and snuggled. I made soap with my sisters/friends. Then Jeremy and I stuffed ourselves with meat at Texas De Brazil. It was a good day. I turned 25. Right now that feels old, not in a I'm-so-embarrassed-cause-I'm-not-young-anymore way, but just a I'm-actually-an-adult kinda way. I'm sure later I'll look back and think I was such a baby. But I've gotta say, it feels good to be this age. To be old enough to live the way I want to, to live with who I want to, to somewhat control how much responsibility I have. It's nice. A blessing indeed. To be honest, if you'd asked me five years ago where I thought I'd be now, this definitely isn't it. I thought I'd have several children by now and a house. But we live in a tiny apartment just the two of us. Like, you can see our bed from the front door, tiny. Sometimes I'm sad because the Lord has chosen not to give us children (at least for now) or a large excess of income. But I am thankful for the time that it gets to be just me and Jeremy. Sometimes that alone is hard to handle. I'm so immature and irrational at times I'm thankful that I have so much time to grow. And I'm thankful that I don't have a million house chores to keep up with. I mean, I definitely don't want to stay here forever, but I do want to make the most of it and learn whatever God intends me to from this. Our prayers are that God would do what would glorify Him most. If that's giving us children, we'll joyfully take it. But if that's being together, just the two of us, working hard at seemingly small jobs, we want to do that with glad hearts too. I often overlook how important it is to take every small moment and glorify God with it. That doesn't mean that you have to be reciting Scripture every breath (though that would be cool), but it does mean that you work your best at everything that's put in front of you, that you're honest and caring, and that your rest and satisfaction come from the Lord and not the outcome of things. At first the idea of trying to glorify God in everything seems kind of daunting. But when it's about resting in Him and being satisfied in Him over anything else it's freeing. It's freeing that He's so patiently loving. That He hasn't given up. That every hard and terrible thing is for a purpose. For His glory. Even if it's hard to see. Geez. I really didn't plan on talking about any of that but there it is haha.

It's hot of the griddle, it's fluffy, it's toasty and it's covered in berries! Let's make French Toast together...
Start with a loaf of french bread. Either slice it up the night before a let it sit out to get dry or slice it and dry it out in the oven at 250 for 15 minutes.
While that's going let's get the berry compote started. In a sauce pan combine 3 cups of berries. I used blackberries, raspberries and blueberries. 1/2 cup of sugar, 2 Tbsp corn starch and 1/2 cup of water. Put it over medium heat. Stir it occasionally.
In a baking dish you'll need 2 cups heavy cream, 4 eggs, 1 tsp cinnamon, 1/4 tsp nutmeg, and 1 tsp vanilla.
whisk it together until it's one homogeneous mixture.
Take your bread slices and place them in the custard. Work quickly so that each side only gets soaked for 20-30 seconds. We want them saturated but we don't want them so soggy they're falling apart.
as you finish, place them on a cookie sheet to rest while the griddle gets hot. Heat it to 350 or use a non stick pan on med-high heat
Butter your pan or spray with oil
Cook them on each side for 3-4 minutes or until golden brown
As you finish, keep them warm on a cookie sheet in the oven.
By now your berry compote should be ready too. Your berries will have burst and you'll have a sweet slightly thick berry sauce.
Serve it on a platter and give it to the one you love. Even if that's just you.
