I've been wanting to make these for the blog for SO long. I love bagels so much, especially everything bagels. Also, have you tried Parmesan bagels? They're a close second for sure. Plus any excuse I have to squish some dough and make the apartment smell like fresh bread I take it. Fresh warm bread is always a good idea. These bagels are soft, squishy, chewy, and they have the best bite. Let's make some bagels together... you know you want to.
Stir together 1 3/4 cups warm water, 1 T sugar, 2 tsp salt and 2 1/4 tsp Yeast.
Let it sit for 5 minutes
Dump the foamy mixture into a mixer bowl.
Add in 4 1/2 cups flour
add 1/4 cup melted butter
Knead it together on low speed until a dough forms.
Crank the speed up to med-high and let the dough slap around until it gets all smooth (4 ish minutes)
Spray the bowl with oil
Put your dough back in and place a towel on top. Let the dough rise for an hour (until it's doubled in size)
While the dough is rising let's make up our "everything"
stir together 2 tsp each: sesame seeds, poppy seeds, dehydrated minced onion, dehydrated minced garlic.
Yay, our dough is ready.
Poke your little fingers in and squish it around.
weigh out your dough. Mine weighed 1073 grams.
Separate your dough into 8 equal pieces. ~134 grams each. If you don't have a scale, just try to get them as even as you can. We want them all to bake evenly.
as you measure the dough, keep them under a damp towel.
Stick your finger through the center and push the dough in circles on the counter until the dough is smooth on both sides.
In a shallow pot boil 6 cups of water with 6 Tbsp baking soda. (the ratio is very important)
Boil each bagel for 1 minute on each side.
When they're all done, bring over your everything seasoning, 3 Tbsp grated Parmesan and one egg white whisked with 1 Tbsp water.
Brush each bagel with the egg wash
Sprinkle on the Parmesan
and then sprinkle each with your everything seasoning.
Bake at 450 for 12-14 minutes
Let them cool and store them in a cloth (breathable) bag or wrap them tightly in plastic and foil and keep them in the freezer.
They're so good out of the oven!
They're squishy and chewy
and so soft in your mouth.
I love them sliced in half, toasted and slathered with cream cheese.

Just made bagels following this recipe. Only made 1/2 the recipe because it was my first time making bagels. Turned out perfect! Thanks for sharing; came in handy during quarantine.
