If you know me, you know I do not like sugar cookies. But these chewy vanilla bean sugar cookies... I'm into. Plus it's so fun because they're rolled in sugar so you can roll them in colored sugar and customize them for the Holiday or season. Such an easy way to have cute theme coordinated cookies. Let's make sugar cookies together... start with a medium bowl and 2 3/4 cups flour 1 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt whisk. in another bowl, 1 cup room temperature unsalted butter 1 1/2 cup sugar mix well 1 egg and 1 1/2 tsp vanilla bean paste (vanilla extract can be subbed) mix well add in the flour mixture in three additions, mixing well between each. we're gonna coat our cookies in sugar, and since it's Christmas, we're using red, green and white sugar. get Tbsp sized scoops and roll them in sugar Chill them while the oven is preheating to 350 for a minimum of 30 minutes.
