Okay, I know we all buy oatmeal intending to one day wake up and desire a healthy breakfast that's easy and filling, but then never actually eat it because seldom is anyone ever actually in the mood for oatmeal, and when we are it explodes in the microwave making us regret our desire to make good choices in the first place. Is that just me? Well I hope not. Cause if you also experience such things then you too have a full container of oats in your pantry just begging to be made into something you'll actually eat and like. Hence... chai granola. Crispy little chunks of homemade granola filled with the delicious flavors of the beloved Chai tea. Let's make granola together... Start by pouring 8 cups of oats into a large bowl (you can use 6 cups and probably not have to change the ratios.. I just had 8 and wanted to use them all) and in another bowl measure out your spices: 1 tsp each- ginger, cinnamon, cardamom, and cloves. Then 1/2 tsp black pepper. stir the spices into the oats. in one bowl (or cup) whisk up 3 egg whites. We want them to be broken up and a little frothy. And in a bowl measure out 1 cup of coconut sugar (or brown sugar) and 1 T vanilla extract. stir them together then stir that into the oats until all the oats are evenly coated. Pour the oats onto a lined cookie sheet. The more you pack it down together the clumpier the granola will be. So if you want it less clumpy don't pack them down. Bake at 325 for 20-35 minutes. Stir them halfway through the bake so ensure that all of it really dries out. Timing really depends on your oven. Watch it. Cause if they burn you'll cry. But you don't want to pull them out until they're starting to look toasty. Once you pull it out wait until its completely cooled to touch it, that'll help the clumps to stay together. It may still be a little soft while warm but it'll crisp up as it cools. If it cools and you find you still want it crispier, just bake em again for 5-10 minutes.
