I am SO FREAKING PUMPED about how these turned out. It was really just a shot in the dark but they came out SO YUM. They're so soft, so squishy and super delish. I made these in sort of a sandwich roll shape specifically for a picnic I was going on with my friend Becca. But after eating them my mind exploded with thoughts of making them into little rolls for Thanksgiving or even making them the day after Thanksgiving to stuff all of your leftovers into?! yes? I think very yes. It's also possible to make one large loaf.. in a cast iron(?!!!) or even a dutch oven! Ugh so many possibilities. Let's make some Oat Wheat Bread... Begin with 2 cups warm water (not too hot or it'll kill the yeast) 2 1/4 tsp yeast (the same amount that comes in an individual packet) 1/4 cup honey Dump it into your mixer bowl Stir it around to agitate the yeast Let it sit for 5 minutes until it gets foamy. 1/4 cup olive oil, 1 cup oats, and 1 tsp salt. Stir them in. Next we'll stir in 2 cups All-Purpose Flour. We want to use both A.P and Whole Wheat because Whole Wheat Flour on it's own usually yields a very dense bread. Now 3 cups of Whole Wheat Flour. I chose White Whole Wheat Flour. But mix in all but 1/2 cup of it. If after you mix it in the dough is really sticky, then add in the remaining half cup. Knead on a low speed for 5-7 minutes. Until it looks like this. It should be easy to grab and almost sticks to your fingers, but comes of easily. Put it in an oiled bowl. Cover with plastic wrap and let it rise for an hour in a warm place. My go to place is in the oven. turned off, with the oven light on. Woaah. Look at that baby. Breathe it in... smell the yeasty goodness. gently press the air out. Here's where things are versatile. You can leave the dough as one big round loaf, or one big long loaf, or lots of little rolls or follow me and make them into sandwich rolls. *no matter which shape you're making you'll still want to follow these steps, just maybe not the cutting and portioning part* Flatten out the dough into a long log. Cut into six pieces. If you're anal like I wish I had been, you can weigh them out to make them even. Working with one at a time, flatten it out... Roll it up (this helps the bread reach it's full potential and encourages it to puff up in the oven) Find your seams and pinch them closed. Roll it with both hands to make it just a bit longer. I should have measured but I'm gonna say around 6". Place your lil loaves on an oiled cookie sheet Cover them with a damp tea towel and let them rise again for 30 minutes When they're ready, brush them with an egg white and sprinkle oats on top. Bake for 30 minutes at 375. If you kept yours as one loaf then increase the baking time by 10-15 minutes. Let them cool on a wire rack. I wish you could see how squishy and yum they are in your mouth! Eat them plain, eat them with butter. make them into a sandwich... Idk.
