Homemade salsa = instant Fiesta. So, let’s make salsa together... Get out: 6 Roma Tomatoes, 2 jalapenos, 2 Hatch Green Chiles (or whatever is seasonally good), 1 lime, 1 onion (white or red) and a bunch of cilantro... I just forgot to get it in the photo. Dice your tomatoes and set aside. Roast your peppers over medium-high heat, rotating to get all the sides, until nicely blistered. (Sometimes I roast my tomatoes too, before I cut them) Sice them up. If you want your salsa less spicy, remove the seeds and then slice. dice 1/2 of the onion and slice the lime in half. Chop up one handful of cilantro. Set the cilantro and a little bit of the onions aside so we can mix them in at the end. Put your tomatoes, onions and peppers in the blender. Also toss in 1/2 teaspoon Cumin, 1/2 teaspoon salt, 1 teaspoon Garlic. Pulse until you reach your desired consistency. Basically I like mine like Pico De Gallo haha, but feel free to completely blend it. Pour it into a bowl Stir in the Cilantro, leftover onion and lime juice. Yum.
