A play on the everything bagel. Enjoy a slice or two toasted with butter or cream cheese, with a scrambled egg, or even with sausage egg and cheese for a breakfast sandwich. This is just a basic white bread recipe with some extra flavor added. Let’s make bread. When recipes call for lots of ingredients, it helps to measure all of your ingredients ahead of time. Read the recipe through, maybe even write it out for yourself just to make sure you've read it thoroughly. If multiple ingredients are meant to be added at one time, put them in a bowl together so that when the time comes you can just dump without having to measure each thing and make sure you didn't forget anything. Let's begin. Get all of your ingredients out: water, sugar, yeast, milk, poppy seeds, sesame seeds, onion powder, Parmesan, Romano, egg, flour, salt, and melted butter (not pictured because it was in the microwave). Mix your cheeses together. Mix your seeds and onion powder together. Set aside. Mix your warm water, sugar and yeast together. Stir and let sit for 5 minutes. While yeast sits, mix flour and salt in a medium bowl. Push to sides to create a well. Pour yeast mixture into the well. Add egg, melted butter, and sugar to the well. Mix wet ingredients with a silicone spatula. Stir in the flour. Add the milk in three parts, stirring well in between each addition. Begin kneading by hand ONLY sprinkling more flour if it’s unmanageable without. It is okay for it to be slightly sticky. (I was too eager and probably didn’t need to add more flour) How I knead: hold the bowl with one hand. Grab the dough from the edge farthest from you. Lift it upright. Push it down using the palm of your hand. Push the dough slightly forward using the heel of your hand. Lift it again to rotate it and continue. Knead until it feels rather smooth. Sprinkle in most, but not all, of your seed mixture and your cheese. Knead to distribute. Mine looked like it needed some more, but save some for the top of the loaf. Shape it into a ball. Pour oil on top. Turn the dough to coat the dough and bowl with oil. Cover with plastic wrap. Set in a warm place to double in size. I usually put it in my oven with only the oven light turned on, no heat. It takes about an hour. If you have to leave for more than an hour, refrigerate it, then bring it back to room tempurature and let rise until doubled. Grease a loaf pan and gently form your dough into a log inside the loaf pan. Cover with plastic wrap and let the dough rise again for 30 min. Preheat your oven to 350° while your dough rises. Whisk one egg yolk and two tablespoons of water. Brush over your loaf. Sprinkle your remaining cheese and seed mixture over your loaf. Bake for 30 minutes. Let your loaf cool for 4 minutes. Remove your loaf and leave it to cool completely on a cooling rack. Now you may slice. If you’ll eat it within three days, wrap it in a towel and leave at room tempurature in a dry place. Otherwise, seal it in a ziploc bag and refrigerate or freeze. everything bread recipe Ingredients: 1/2 Cup Warm water 2 teaspoons Yeast 1 teaspoon Sugar 1 teaspoon Poppy Seeds 1 teaspoon White Sesame Seeds 1/2 teaspoon onion powder 2 Tablespoons Romano Cheese, grated 2 Tablespoons Parmesan Cheese, grated 3 Cups Flour 1 Eggs 1 teaspoon Salt 1 1/2 Tablespoons Sugar 1/4 Cup Butter, melted 1/4 Cup Whole Milk extra flour for dusting oil for coating 1 Egg Yolk 2 Tablespoons Water Process: - Mix poppy seeds, sesame seeds, and onion powder together. Set aside. - Mix grated cheeses together, set aside. - Mix warm water, yeast and sugar together, let sit for 5 minutes. - While yeast mixture sits, mix flour and salt in a medium bowl. Push flour mixture to the sides of the bowl to make a well. - Pour yeast mixture, 1 egg, sugar and melted butter into the well. - Stir wet mixture with a silicone spatula until mixed. - Mix wet and dry ingredients together until roughly incorporated. - Add milk in three parts, mixing fully in between each addition. - Sprinkle a little bit of your extra flour on top and begin to knead by hand. - Once dough is rather smooth add in most but not all of your seed mixture and your cheese. Knead it in until completely incorporated. - Sprinkle on some more of your extra flour and knead until dough is mostly sooth. - Form it into a nice ball, coat dough and bowl with oil, cover with plastic wrap, and set in a warm place to rise until doubled in size. (I usually put mine in the oven turned off, with the oven light on, for about an hour) - Form dough gently into a log. - Grease a loaf pan and insert your dough. - Cover and let rise for 30 minutes. - Preheat the oven to 350 and let your loaf rise for 30 minutes while the oven gets warm. (make sure your loaf is not inside the oven while it heats up) - Whisk egg yolk with two Tablespoons of water. Brush on. - Sprinkle on your remaining seed mixture and cheese. - Bake for 30 minutes. Let cool for 3-5 minutes before removing the loaf from the pan, but you do want to remove it before it is completely cool. - Slice only once the loaf has cooled completely. How would you enjoy it?
