Jeremy and I get so excited when the weather gets cooler and we can make this chili. Every time we’ve made this, we make it together. It’s so fun. And so YUM. He was so sad that this time I had to make it without him... but he still got to eat it with me, so that’s the important part. Lol. Let’s make Dead Guy chili together... This chili gets it’s name from the ale we put in it. Dead Guy Ale. So, you’ll need one of those. You’ll also need : 2 T olive oil, 2 t salt, 1 t pepper, 1lb ground beef, 1lb Italian sausage, 1 red onion, 3 bell peppers- different colors, 1 jalapeño, 4 cloves of garlic, 6oz tomato paste, 1/4 c chili powder, 1 T cumin, 1 T oregano, 2 t paprika, 1/4 t cinnamon, 1/4 t red pepper flakes, 28oz crushed tomatoes, 14 oz fire roasted tomatoes, 15oz each- black beans, kidney beans and pinto beans and lastly 1/4 cup maple syrup. If you’re a chili purist, you can forego the beans and double the meat instead. Idc. chop the bell peppers, onion, jalapeño and garlic. heat oil in a large pot over med-high heat (you need at least an 8qt pot) add in meat and salt+pepper brown it up. take out the meat and set it aside. now dump in your bell peppers, onions and garlic. Stir and cook until soft. throw in the jalapeño throw in tomato paste, chili powder and your other seasonings. stir it in really good. Cook over medium until the bottom of the pot starts to get pretty dark. stir the meat back in. use your spoon to scrape the pan and get off all the flavor. pour in your Dead Guy. Add in everything else. Stir it all together Bring to a boil. cover it and reduce it to a simmer for a minimum of 1 hour, up to 4 hours. I prefer my chili so loaded you can’t see the chili. Do you top yours with anything???
