Banana recipe number Two from a non-banana-lover. These don't taste like banana if you use really ripe bananas. They just taste good and are great for keeping around for a quick snack or breakfast. So, let's make muffins together. In a large bowl, sift together 2 cups of flour, 1 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg. !/2 cup of oil, beat together. 1/2 cup honey, beat again. 2 eggs, one at a time, beating between each. Set aside. In a bowl, mash three very ripe bananas. Add 1 teaspoon vanilla and stir. Pour bananas into the batter and beat well. For the streusel: melt 2 tablespoons of butter in a small bowl. add half a cup brown sugar and stir. add about 1/3 cup of flour and stir until crumbly. Fill each greased muffin cup with 1/4 cup batter and top with streusel. Bake at 350 for 20 minutes.
