Baking is a lot of fun, but it’s even more fun when you get to enjoy it with someone else... especially a tiny cute someone else. Before baking with kids I thought “this is gonna be really messy”. Then I remembered that even baking without kids is really messy. Well, at least for me it is. It seems crazy, I know. Must be a lot of work, right? Nope. Must be really hard? Nope. Must be more expensive? Nope. It’s rather fascinating that only a few things plus some heat can get you creamy fresh mozzarella. Honestly, the whole time I was making this I just kept thinking, “this isn’t gonna work. This isn’t gonna work.” But then, it worked. I had cheese. I made cheese from a gallon of milk. I didn’t die and I made cheese. It’s pretty exciting, if you get excited about that kind of thing. There are only two things you need to get that you likely don’t already have: citric acid and rennet. They’re not scary things, just some powder and a liquid. Plus when you count the cost of how many times you can use each of them... it’s definitely cheaper to make fresh mozzarella than to buy it. At Kroger the cheapest price I could find was $4.79 for a pound of mozzarella. This recipe makes 1lb 4oz and comes out to only $.34 ($.14 for citric acid and $.20 for rennet) more than the price of a gallon of milk, which I got for $1.88. You can use a 2oz bottle of rennet for 48 batches of mozzarella. You can use a 7.5oz container of citric acid for 25 batches. Maybe you still don’t think it’s worth buying two extra things. That’s fine. But know that if you ever change your mind, it’ll be really simple and the recipe is right here. Let’s make mozzarella together.
This is my mother’s lasagana. Well, pretty much. The only things I did differently than my mum does— I added sausage and I used homemade ricotta, mozzarella, sauce and noodles. My mum doesn’t use fresh mozzarella at all actually... so if you’d rather not then you definitely don’t have to, it will still be very yum. But the homemade mozzarella and ricotta make it much creamier. But besides all that it’s basically my mum’s recipe. My mother has made this for as long as I can remember and she’s honestly ruined me for all others. Like I don’t even like getting lasagna at restaurants because hers is better. Maybe it’s all speculation. Maybe. But maybe hers really is that good. Maybe you should make it and find out. Let’s make lasagna together.

I get it if you don’t want to make crust from scratch. That’s fine. But just know that your pie will be inferior. If you’re fine with that, I’m fine with that. This is just your basic all-butter crust and it’s my personal favorite. Jeremy loves it. I love it. It’s yum. If you want to get fancy, depending on what you’re using the crust for, you could add any number of things, like: cinnamon, nutmeg, basil, cheese... just try. You might even like it. (Rolling out crust is my favorite part of pie making)

Pasta is very simple to make. The recipe is rather straightforward. There are lots of variations of dough you can make, this is just the one that I most often make. You CAN dry out pasta, but I prefer not to with this particular recipe because it gets a bit crumbly.... but it tastes lovely cooked fresh, or from frozen. No, you do not need a pasta maker to make homemade pasta. You can use one. I have one that Jeremy got me last Christmas. I use it often so my dough can be uniform. Honestly though, the pasta machine is not faster than doing it by hand. It is only more consistent. I made pasta one time with my friend Brittany and we wanted to see if one was faster than the other... and they're literally the same... both take a bit of time. So maybe don't try this when you have somewhere to be shortly. Try it on your day off... and make enough to save some for later to make the most of your time and your effort.
